Pectin has thickening and gelling properties. Therefore, it is one of the important food additives used during food processing. There is currently no commercial pectin production in our country and our annual need of 620 tons is met from abroad. The 2017 import volume is 8.6 million TL. With this project, it is aimed to obtain pectin from apple pulp and apple peels and to determine apple pectin production conditions. In our country, apple pulp and apple peels released during the processing of products such as apple juice, apple concentrate and dried apple chips are either sent directly to the garbage or to feed processing factories as animal feed. Apple pulp and apple peels are very rich sources of pectin and are very valuable for commercial pectin production.
